Use a Quality Sealant
You do not have to stain your wood countertops, but you do have to seal them properly. Applying the sealant to your wood countertop will usually make it look a shade of two darker than its original color, so unless you want a much darker hue, you can just apply the sealant and forget about staining it. Depending on the quality of your sealant and the use your wood countertop gets, you probably need to reapply the sealant every couple of years.
Take Care of the Surface
Even after sealing your wood countertop, you have to learn to treat it like a fine piece of furniture. Keep the surface as dry as possible, avoid leaving water glasses or setting hot objects on it directly, and certainly do not use it as a chopping or slicing board. It takes a little getting used to, but the richness of the wood and the enjoyment that you get from using your kitchen will make your extra efforts worthwhile.
